Lemon Red Lentil Soup

Jen loves the delicate texture of red lentils in this easy to make and delicious soup.


Ingredients

  • 2 large carrots, unpeeled, diced
  • 2 stalks of celery, diced
  • 1 yellow onion, diced
  • 2 cloves of garlic, crushed
  • 2 tablespoon olive oil
  • 1 lemon
  • 2 cups dried red lentils
  • 6 cups of vegetable or chicken broth

Method

  1. Sauté veggies in olive oil until softened.
  2. Add zest of 1 lemon.
  3. Mix in 2 cups of rinsed red lentils.
  4. Add about 6 cups of vegetable or chicken broth. (Jen prefers @pacificfoods organic vegetable broth)
  5. Bring to a boil, then simmer for 30 minutes until the lentils are soft.
  6. Add juice of one lemon for a real lemony taste or half if you prefer less.
  7. Garnish with salt and pepper to taste.
