Jen loves the delicate texture of red lentils in this easy to make and delicious soup.
Ingredients
- 2 large carrots, unpeeled, diced
- 2 stalks of celery, diced
- 1 yellow onion, diced
- 2 cloves of garlic, crushed
- 2 tablespoon olive oil
- 1 lemon
- 2 cups dried red lentils
- 6 cups of vegetable or chicken broth
Method
- Sauté veggies in olive oil until softened.
- Add zest of 1 lemon.
- Mix in 2 cups of rinsed red lentils.
- Add about 6 cups of vegetable or chicken broth. (Jen prefers @pacificfoods organic vegetable broth)
- Bring to a boil, then simmer for 30 minutes until the lentils are soft.
- Add juice of one lemon for a real lemony taste or half if you prefer less.
- Garnish with salt and pepper to taste.
