Irish Soda Bread

This bread has been made for lots of Hills family occasions, including school bake sales and for Christmas mornings with raspberry jam.


Ingredients

  • 2 cups all-purpose flour
  • 1 cup whole wheat flour
  • 2 tablespoon flax or sesame seeds
  • 2 tablespoon granulated sugar
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 1/2 cups buttermilk
  • 1/4 cup vegetable oil

Topping

  • 1 tablespoon all-purpose flour

Method

  1. Preheat oven to 190C (375°F). Line baking sheet with parchment paper.
  2. In large bowl, whisk together all-purpose flour, whole wheat flour, seeds, sugar, baking soda, and salt
  3. In separate small bowl, whisk together buttermilk and oil. Add to dry ingredients all at once. Stir with fork until soft dough forms.
  4. Turn out dough onto a lightly floured surface.With floured hands, press dough into a ball, knead lightly 10 times. Place on baking sheet. Gently pat out dough into a 6-inch circle.
  5. Topping: Sprinkle flour over loaf.
  6. With a sharp knife, score a large X on top of the loaf.
  7. Bake at 190C (375°F) for about 45 minutes, until golden and a toothpick inserted into center comes out clean.
