Syd’s closest grocery store in North Vancouver was an Asian market, and she mastered this dish with their ingredients.
Ingredients
- 1 cup cooked jasmine rice
- ½ tsp vegetable oil
- 1 egg
- 1 tbsp regular soy sauce
- ½ tsp sesame oil toasted
- 1 green onion finely sliced
- 1 avocado
- edamame beans (I defrost from frozen)
- 1 tsp roasted seaweed flakes
- 1 tbsp fermented soybeans in chili oil (Lao Gan Ma)
Method
- Cook a fresh batch of jasmine rice, the Hiils family members all seem to use a rice maker, where rinsing the rice appears optional. 😉
- Heat cooking oil and fry the egg sunny-side up.
- Place the fried egg on top of the rice.
- Garnish with soy sauce, a drizzle of sesame oil, chopped green onions, sliced avocado, edamame, roasted seaweed flakes, and a spoonful of Lao Gan Ma.
