Parchment paper pocket cooking elevates salmon by retaining moisture and flavour.
Ingredients
- 1.5lbs (0.7kg) fresh salmon
- 1 tablespoons stone ground mustard
- 1 tablespoons honey
- 1 tablespoons soy sauce
- 4 cloves minced garlic
- 1 teaspoon dried basil
Method
- Preheat oven to 400°F (200°C) and set an oven rack in the middle position.
- On a baking sheet, place the salmon on the an oversized square of parchment paper.
- Combine stone ground mustard, honey, soy sauce, garlic, and basil in a small bowl.
- Coat the salmon with the with the mixture.
- Fold the parchment paper over and pinch it into a pocket.
- Cook for 20 minutes.
- Open the parchment paper pocket and serve.
