Paper-Baked Salmon with Stone Ground Mustard Glaze

Parchment paper pocket cooking elevates salmon by retaining moisture and flavour.


Ingredients

  • 1.5lbs (0.7kg) fresh salmon
  • 1 tablespoons stone ground mustard
  • 1 tablespoons honey
  • 1 tablespoons soy sauce
  • 4 cloves minced garlic
  • 1 teaspoon dried basil

Method

  1. Preheat oven to 400°F (200°C) and set an oven rack in the middle position.
  2. On a baking sheet, place the salmon on the an oversized square of parchment paper.
  3. Combine stone ground mustard, honey, soy sauce, garlic, and basil in a small bowl.
  4. Coat the salmon with the with the mixture.
  5. Fold the parchment paper over and pinch it into a pocket.
  6. Cook for 20 minutes.
  7. Open the parchment paper pocket and serve.
