Syd’s Korean Egg Rice

Syd’s closest grocery store in North Vancouver was an Asian market, and she mastered this dish with their ingredients.


Ingredients

  • 1 cup cooked jasmine rice
  • ½ tsp vegetable oil
  • 1 egg
  • 1 tbsp regular soy sauce
  • ½ tsp sesame oil toasted
  • 1 green onion finely sliced
  • 1 avocado
  • edamame beans (I defrost from frozen)
  • 1 tsp roasted seaweed flakes
  • 1 tbsp fermented soybeans in chili oil (Lao Gan Ma)

Method

  • Cook a fresh batch of jasmine rice, the Hiils family members all seem to use a rice maker, where rinsing the rice appears optional. 😉
  • Heat cooking oil and fry the egg sunny-side up.
  • Place the fried egg on top of the rice.
  • Garnish with soy sauce, a drizzle of sesame oil, chopped green onions, sliced avocado, edamame, roasted seaweed flakes, and a spoonful of Lao Gan Ma.
